Recipe Compliments of Chef Kim Naimoli, VP Membership for GFLSCI
Did you know that GFLSCI Membership Chair, Kim Naimoli is also a renowned chef? For our summer edition of the GFLSCI News, we thought it would be fun to share one of her great recipes from the grill. One of her favorite things to grill for a family get-together is chicken. It's easy, economical, and so delicious. Tomato salad is a simple, but delicious side for this dish. Just slice some tomatoes onto a platter, generously sprinkle with fresh basil and good olive oil, and salt & pepper to taste.
For the garlic-rosemary vinaigrette:
- 8 cloves roasted garlic
- 4 sprigs of rosemary
- 1/4 cup lemon juice
- 1 tablespoon honey
- 1/2 teaspoon kosher salt
- 3/4 cup good olive oil
For the grilled chicken:
- Kosher salt
- Olive oil
- 8 (8-ounce) bone-in chicken breasts with skin on
- Freshly ground black pepper
The first thing you want to do for really tender and moist chicken, especially if you are using chicken breasts, is brine them. Mix 1/4 Cup of sugar and 1/4 Cup of kosher salt with enough water to cover the chicken and let it rest in the refrigerator for 4 to 6 hours.
Next, combine garlic, rosemary, lemon juice, honey and salt in a blender. Blend until smooth. With the motor running, slowly add the oil.
For the grilled chicken, Strain the water off, pat the chicken dry. Brush the chicken with oil and season with salt and pepper. Place the chicken on the grill, skin-side down and grill until golden brown and slightly charred, 6 to 7 minutes. Turn the chicken over and continue grilling until just cooked through, 5 to 6 minutes. Remove the chicken to a platter and immediately drizzle with the garlic-rosemary vinaigrette. Let rest 5 minutes before serving.
We hope you enjoyed this recipe. Look out for more delicious recipes from Chef Kim Naimoli in our upcoming issues.
